I actually really enjoy cooking. I like trying out new recipes with new ingredients and learning new techniques. I find it soothing and fun at the same time! I like nothing more than turning on some jazz, pouring a glass of wine, and having my way with the kitchen stove. However, as a working woman and mother of 2, I don’t always have the luxury of cooking a full meal. I find myself gravitating more and more towards quick recipes and easy shortcuts as my children get more involved with activities in the afternoons and evenings. Don’t get me wrong, healthy eating is still important to my family, and I try to avoid the fast food trap. I put a home-cooked meal on the table as often as I can, or pack a picnic dinner to go. Having some really easy, quick, go-to meals helps, and this is one of my favorites! It’s also perfect for this time of year when schedules quickly fill with holiday activities and errands, and when we may have unexpected guests stay for a meal! I always have these ingredients on hand in my freezer and refrigerator for those nights when a quick but delicious supper is called for! So, here goes my Three-ingredient Chicken Parmesan!
That’s it! Serve with pasta if desired, or with a salad and garlic bread, veggie side, lots of options! Easy Peasy! The secret is the Bell and Evan’s chicken, which is delicious!
