What To Eat Wednesday: Homeade(ish) Chicken Soup

As with a few of my previous recipes, I am again using rotisserie chicken for this soup. It’s easy, tastes delicious and is the perfect texture for a soup.

Ingredients:

Rotisserie Chicken — pull as much as you want in the soup. I don’t love a lot of chicken in my soup, so I probably use about one breast

Container of Culinary Chicken Broth (I use the Nature’s Promise brand from Stop & Shop – it has more flavor than your typical broth). If you are serving more than 4 people, double the recipe.

Diced carrots & celery

Cooked noodles or rice (whichever your family prefers!)

Celery seed

Garlic powder

Tbsp butter

Tbsp flour

Salt & pepper

Melt butter in large pot. Add carrots & celery and sprinkle in flour. Cover the veggies in flour & stir around for about 5 minutes. Add broth & stir in chicken. Add celery seed, garlic powder, salt & pepper to taste. Let simmer for about 20 minutes. Add cooked noodles or rice & serve! Viola — homeade(ish) soup!!
