WTE: Mom’s Mac & Cheese: A Halloween Favorite

Halloween is one of those days that you need your kids to get some food in their bellies before all of the junk that comes with the holiday ensues! Growing up, we always had homemade mac & cheese before trick-or-treating. It was a meal my mom could make ahead of time (who has time to cook in the flurry of after school events, homework & costume dressing?!) and one that she knew we would all eat! Pair with any vegetable and you are good to go. If you want to get really creative, you could make garlic toast mummies from shredded mozzarella cheese & olives. That’s way above my creativity level, but I know people who have done it 🙂


About 2 tablespoons dijon or dark mustard

2 Tablespoons of butter

2 Tablespoons flour

2 cups of milk (I often substitute 1 cup with almond milk)

1 Bar Extra Sharp cheese (I prefer Cabot), sliced into squares

1 Package of noodles, any shape

Salt & pepper to taste

Breadcrumbs, if desired

Preheat oven to 350 degrees.

Boil noodles and set aside. Meanwhile, melt butter & mustard in a saucepan until well mixed. Slowly add flour & continue to stir.  Add milk & 3/4 of the cheese slices. Stir until cheese is melted and a sauce is formed.

Put 1/2 of the cooked noodles in a casserole dish & pour the cheese mixture on top. Add the rest of the noodles & the rest of the sauce. Mix well and place the rest of the cheese slices across the top of the noodles.

Sprinkle with bread crumbs and bake for 25-30 minutes.
