I came across this recipe on Pinterest and it was one of my first “pins”. The recipe had me at scallions, cilantro and avocado. Another bonus, no mayo. This is a go-to recipe in our house, and I hope you enjoy it as much as we do!
1 pound of chicken, cooked and shredded
1 bunch of finely chopped scallions
roughly 2-3 TBSP of cilantro
2 – 3 limes
1-2 avocados, chopped
salt and pepper to taste
Mix chicken, scallions, cilantro and avocado in a bowl. Once well blended, add in the juice from 2 limes and mix well. Taste and add any more ingredients as desired. Enjoy on a sandwich or as a hearty dip with tortilla chips. Will last 2-3 days in the fridge.
