WTE Wednesday -Crock pot salsa chicken

While I definitely cannot take credit for this meal, I’m certainly going to spread the word!  Last week, during a VERY cold and icy morning, I sent out a quick text looking for an easy crock pot recipe.  Within seconds, Mary wrote back, “The easiest is chicken with a jar of salsa verde.”  A quick look in the fridge and pantry confirmed that I had both ingredients, and I threw them in the crock pot on low.  Right before serving, I used a pair of tongs and the chicken easily shredded.  Serve with hard or soft taco shells, over a bed of lettuce, or even over rice!  Inexpensive, healthy, easy and delicious!  Woohoo for that!


3 or 4 boneless, skinless chicken breasts

1 jar of salsa verde

Fixings of your choice: cheese, lettuce, rice, avocado, bean, taco shells

Cook on low for 4-5 hours and shred before serving.
