WTE Wednesday – Lemon Cheesecake Mousse

This simple, easy dessert is so pretty and equally delicious!  It will have your guests thinking you’re the next Martha Stewart (nobody will know that you bought the shot glasses at the Christmas Tree Shops – $3.99 for a package of 12)!


1 cup whipping cream

8 ounces of softened cream cheese

1 cup of prepared lemon pie filling

1 teaspoon vanilla

1/2 cup of confectioners sugar

Raspberries for topping


In a bowl, whip the whipping cream until stiff.

Beat the cream cheese and pie filling until smooth.

Stir in the vanilla and sugar and combine well.

Gently fold in the whipped cream.

Spoon mixture into glasses and top with raspberries.
