WTE Wednesday: Pizza Rolls

Finding meals that the whole family will enjoy can sometimes be challenging.  I am not a mom who will make a separate dinner for kids and adults.  My motto has always been “Dinner:  eat it or go hungry.”  Having said that, I do try to make meals that will appeal to all.  I find that meals where everyone can pick their own toppings are a huge hit, think MYO pizzas or taco night (see our recent WTE post on chicken tacos).  I love this recipe because it’s very easy to double or triple and freezes well.  As a working mom, having meals ready to go in the freezer is a life changer!  Hope that you enjoy, and if you have other tasty, easy, week night meals please share them in our comments!

Pizza Rolls

1 package of store bought pizza dough (I use multi-grain, and there are also gluten free options)

1 jar of marinara sauce (I love Raos)

Deli Turkey, Ham, or other sliced meats

sliced mozzarella cheese

1 jar of roasted red peppers

Olive oil

 

Roll or stretch out the pizza dough into a good sized circle

Cut the dough diagonally into 8 equal slices

Top each slice with meat, cheese, and roasted red peppers

Roll each starting at the tip and rolling to the base

Place each roll onto a baking sheet that has been brushed with olive oil

Brush the top of each roll lightly with olive oil

Bake at 375 degrees for about 15 min or until the rolls are golden

Serve with the marinara sauce for dipping and a side salad.  Easy-Peasy-Lemon-Squeezy to quote my children!

It’s easy to customize these with different fillings.  We have used pepperoni, spinach, sliced chicken, ham and brie (with honey mustard for dipping), tomatoes, the possibilities are endless!  Have fun being creative!
