WTE Wednesday:  Pork Chops with Roasted Apples

Recently, I was looking for a good recipe to cook pork chops in the oven.  Sounds like an odd thing to be searching for, but I had thawed out the chops, couldn’t grill as I had planned due to weather, and didn’t want to waste them!  I can’t say that cooking meat in an oven has ever been my strong suit; I’m more of a stove top, crock pot, and grill kind of a gal.  Fortunately, we have the wonder of Google!  So, I combined a few recipes I found (basically so that I could use ingredients I had and not have to go to the store!) and this is what I came up with!  Don’t let the title scare you off if you are a non-chef.  This is actually really easy, and comes together in one dish.  My kids and husband all approved, which is an even bigger miracle!  Hopefully you enjoy!  Do you have any similar recipes that you’ve created out of necessity?  Please share them in our comments!

Pork Chops with Roasted Apples

4-6 boneless pork chops

2 large apples (I used Granny Smith because that’s what I had!)

1/2 onion, sliced (could also add shallot)

salt and pepper

1/3 cup white wine (any kind will do!)

4-6 Tbsp butter

4 garlic cloves, peeled

BBQ sauce (my fave is Bone Suckin’ Sauce)

3 Tbsp olive oil


Heat the olive oil in a frying pan and preheat oven to 450 degrees

Season the chops with salt and pepper


Once the pan is heated, sear (brown) the chops on both sides, it should only take a few minutes

Meanwhile, slice the apples and onions and place in a 9×13 baking dish

Add the wine, garlic cloves, and pats of butter on top of the apples and onions

Place the browned chops on top of the apples and onions

Spoon a little BBQ sauce on top of each chop

Put the dish in the heated oven, and turn the heat down to 400 degrees.

Roast for about 20 minutes, or until the chops are heated to 145 degrees

Serve with more BBQ sauce if desired, and spoon the apples and onions over the chops.  I paired this with rice pilaf and some roasted veggies, which cook in the oven at the same time!  Bonus!!
