WTE Wednesday – Stuffed Peppers

My husband and I recently decided to become vegetarians.  While we were not big meat-eaters to begin with, I am now trying to find new TASTY things to cook that will work for my very picky husband.

The entire family loved these easy stuffed peppers, and they fit the bill as an all-in-one dish!

Ingredients:

4 red bell peppers – tops off and seeds removed

1 can of black beans – rinsed and drained

1 can of diced tomatoes with chilis – drained

1 box of Spanish style rice pilaf

1 cup of Mexican style shredded cheese

Directions:

Preheat oven to 375 degrees

Cook rice according to directions

While rice is cooking, saute tomatoes and beans over medium heat

Combine rice, beans and tomatoes

Fill peppers with mixture

Put about 1 inch of water in a baking dish and add peppers to the dish.

Top peppers with shredded cheese

Bake for 35-40 minutes, until peppers are tender.  Serve and enjoy!
