WTE Wednesday – Summer Quinoa salad

Summer is a tricky time for meal planning in our house.  The schedule changes daily, and with all the kids home, prepping healthy meals becomes difficult!  I really love the idea of a light, healthy dinner at the end of a hot day in the sun.  This dish can either be a side to your protein, or you can add chicken, salmon, or steak to make it your main (and only) course!

 

1 cup of uncooked quinoa (I am also a big fan of the cooked, frozen quinoa that can be found at Whole Foods and Trader Joe’s)

1 red pepper – diced

1 medium red onion – diced

1 English cucumber – diced

1/2 cup of kalamata olives

1/3 cup of crumbled feta cheese

1/4 cup of olive oil

Fresh lemon juice (I used the juice from one lemon)

Salt/pepper to taste

 

Cook quinoa according to directions and let cool.  Add remaining ingredients and combine.

This dish is great for leftovers, too!
