WTE What To Eat Wednesday : Buffalo Chicken Dip

“Jay, you’re bringing THE dip, right?” It’s pretty much a given that we are bringing this appetizer to all parties we attend!

I stumbled upon this dip a long time ago and was immediately hooked! The cheese, the sauce, the corn chips – I mean, what’s not to like?!

I’ve refined the recipe over the years and have made it into the highly anticipated and most-requested party favorite that it is today! Ha!

The best part is that it’s SUPER easy and is another one of my many recipes using rotisserie chicken!

You’ll need:

  • One package (8 ounces) cream cheese, softened – I use the 1/3 Less Fat version
  • 1/2 cup blue cheese salad dressing
  • 1/2 cup any flavor Frank’s RedHot hot pepper sauce
  • 1/2 cup crumbled blue cheese
  • 1/2 cup shredded mozzarella cheese (you can really use any cheese you prefer)
  • 1 cup shredded Rotisserie Chicken (you can use more or less depending on how chunky/chickeny you want it to be

Place the cream cheese in a 9-inch pie plate and soften in the microwave; about 30 seconds.

Stir the softened cream cheese  with a fork or whisk until smooth. Stir in the dressing, hot sauce and cheeses, then add the chicken.

Bake at 350°F. for 20 minutes or until the chicken mixture is hot and bubbling. Best served with Scoops Corn Chips, but works well with pretty much anything! We often use celery, carrots, crackers and pita chips.

So-whip this is up for an upcoming holiday party and your dish will be the hit of the night! If you want to be extra festive, hit up your local Marshalls or HomeGoods and get a buffalo plaid casserole dish to serve it in!
